Ingredients
1 ½ cups graham cracker crumbs
6 tablespoons melted butter
3 (8 oz) blocks cream cheese, softened
1 cup granulated sugar
½ cup sour cream
3 large eggs
2 teaspoons vanilla extract
2 large Granny Smith apples, peeled and thinly sliced
¼ cup brown sugar
1 teaspoon cinnamon
⅛ teaspoon nutmeg
¾ cup rolled oats
½ cup brown sugar (for topping)
½ cup all-purpose flour
½ teaspoon cinnamon (for topping)
½ cup chopped walnuts or pecans (optional)
5 tablespoons melted butter (for topping)
Caramel sauce, for drizzling
Instructions
1. Preheat oven to 325°F (163°C). Combine graham cracker crumbs and melted butter. Press mixture into bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
2. In a large bowl, beat softened cream cheese until smooth. Add sugar and mix. Blend in sour cream and vanilla. Add eggs one at a time, mixing gently. Pour over cooled crust.
3. Toss sliced apples with brown sugar, cinnamon, and nutmeg. Layer evenly over cheesecake filling.
4. In another bowl, mix oats, brown sugar, flour, cinnamon, and optional nuts. Stir in melted butter until crumbly. Sprinkle topping over apples.
5. Bake cheesecake for 60–70 minutes. Center should jiggle slightly. Cool at room temp for 1 hour, then refrigerate for at least 4 hours or overnight.
6. Before serving, drizzle with caramel sauce and optionally dust with powdered sugar. Slice with a hot knife for clean edges.
