Ingredients

Scale

1.5 lbs ground beef

4 medium Yukon Gold potatoes, chopped into 1-inch cubes

3 large carrots, peeled and sliced into rounds

2 cups green beans, fresh or frozen, trimmed

1 small yellow onion, diced

3 cloves garlic, minced

15 oz tomato sauce

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon onion powder

0.5 teaspoon garlic powder

Salt and pepper, to taste

0.5 cup beef broth (or water)

2 tablespoons olive oil (for browning)

Instructions

1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2. In a large skillet over medium-high heat, add 1 tablespoon olive oil and brown the ground beef. Add diced onion and minced garlic, cook until soft and golden.

3. Stir in tomato paste, Worcestershire sauce, smoked paprika, onion powder, garlic powder, thyme, salt, and pepper. Cook for 2-3 minutes.

4. In a large bowl, combine cooked beef with potatoes, carrots, and green beans. Add tomato sauce and beef broth. Mix well.

5. Transfer the mixture into the baking dish, spreading it evenly.

6. Cover with foil and bake for 50 minutes.

7. Remove foil and bake for another 15-20 minutes, uncovered.

8. Let the casserole rest for 10 minutes before serving.

Notes

Use waxy potatoes like Yukon Golds for a creamy but firm texture that holds up while baking.

Don’t skip browning the beef thoroughly—it brings out rich, savory depth in the casserole.

Add shredded cheddar or mozzarella in the final 10 minutes for a cheesy topping if desired.
