1.5 pounds ground beef

1 cup crushed butter crackers

2 large eggs

3/4 cup milk

1/2 medium onion, finely chopped

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 cup ketchup (divided)

1/3 cup brown sugar

1 tablespoon yellow mustard


Instructions

1. Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.

2. In a large mixing bowl, combine the ground beef, crushed crackers, eggs, milk, onion, salt, pepper, garlic powder, and 1/4 cup of the ketchup. Mix gently until just combined.

3. Shape the meat mixture into a loaf and place it in the prepared pan.

4. In a small bowl, mix the remaining 1/4 cup ketchup with brown sugar and mustard to make the glaze.

5. Spread the glaze evenly over the top of the meatloaf.

6. Bake for 60 minutes, or until the internal temperature reaches 160°F (71°C).

7. Let the meatloaf rest for 10 minutes before slicing and serving.


Notes

Use 80/20 ground beef for the best balance of moisture and flavor.
