  • 4 boneless, skinless chicken breasts
  • 8 slices bacon
  • 1 cup shredded sharp cheddar cheese
  • 1/3 cup Dijon mustard
  • 1/3 cup honey
  • 1/4 cup mayonnaise
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together Dijon mustard, honey, mayonnaise, and garlic powder. Set sauce aside.
  3. Season chicken breasts with salt, pepper, and paprika.
  4. Heat a skillet over medium-high heat with a bit of oil. Sear chicken for 3-4 minutes per side until golden (not cooked through). Transfer to a baking dish.
  5. In the same skillet, cook bacon until crispy. Set aside on paper towels.
  6. Brush each chicken breast generously with the honey mustard sauce.
  7. Top with cooked bacon and sprinkle with shredded cheddar cheese.
  8. Bake for 20 minutes or until chicken reaches 165°F internal temperature and cheese is melted.
