- 10 small corn or flour tortillas
- 2 cups shredded cooked chicken (or beef)
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1/2 cup salsa or enchilada sauce
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- Olive oil or cooking spray
- Optional toppings: sour cream, guacamole, diced tomatoes, cilantro, jalapeños
Instructions
- In a bowl, mix shredded chicken, cheese, salsa, chili powder, cumin, garlic powder, and salt.
- Warm tortillas in the microwave for 15-20 seconds to prevent cracking.
- Spoon about 2 tablespoons of filling onto each tortilla and roll tightly.
- Lightly spray or brush taquitos with olive oil.
- Preheat the air fryer to 380°F (190°C).
- Arrange taquitos in a single layer, seam-side down, in the air fryer basket.
- Cook for 7-10 minutes, flipping halfway, until crispy and golden brown.
- Serve with sour cream, guacamole, or salsa, and enjoy!
